Honey Grilled Peaches with a Cinnamon Brown Sugar Topping

Honey Grilled Peaches with Cinnamon and Brown Sugar Whipped Topping

As many of you are aware, one of my favorite aspects of this summer has been our CSA! We joined up in the winter, not knowing what to expect. The results have been fantastic and I’m loving finding new ways to incorporate the fresh produce into our daily routine! It’s been a fun adventure that I cannot wait to repeat!

Last week’s box included fresh peaches and right away, I knew what I wanted to do. It took a couple of days to actually get around to it (have I mentioned things have been a little crazy here!) but, last night it finally happened. The end result was fantastic and eagerly approved by the whole family: Honey Grilled Peaches with Cinnamon Brown Sugar Whipped Topping.

Want to repeat it? I’m adding the directions for oven roasting (easier with our schedule), but this could easily be completed on the grill. Totally your choice, just take my advice and jump on it today!

Honey Grilled Peaches with Cinnamon Brown Sugar Whipped Topping

  • 6-8 large, fresh peaches – peeled and halved
  • 2 TB Honey
  • 1 cup heavy whipping cream
  • 1 tsp ground cinnamon
  • 2 TB Brown Sugar

  • Preheat your oven to 400 degrees (or start your grill over medium heat)
  • Drizzle peaches with honey
  • Place peaches in oven for 15 minutes (or grill for 10 minutes)
  • In the meantime, combine cream, brown sugar and cinnamon. Whisk with an electric blender on medium-high speed until stiff peaks begin to form. This can be prepared in advance and stored in the refrigerator.
  • Remove peaches from oven (or grill)
  • Place over ice cream (totally optional but wholeheartedly recommended)
  • Top with whipped topping.

It’s that easy. Again – crowd pleaser. Give it a go today!

New Chapters and Moving Forward

Sometimes decisions are just hard. There’s no other way to put it. Many of you have probably noticed that my blog has been a little – okay a lot – less active than usual. It has a lot to do with decisions!

Sometimes things come up that aren’t expected. We’ve been going through a lot of that lately! From great opportunities to health situations and normal family things that arise and require attention (welcome to the world of children!), the past few months have seemed like a whirlwind. During it all, I’ve been trying to find the center and to stay focused on one of the greatest promises ever:

“For I know the plans I have for you,” declares the Lord, “plans to prosper you and not to harm you, plans to give you hope and a future.” – Jeremiah 29:11.

I don’t bring faith into my blog very often. Maybe I should…a lot of my journey has been based on faith. From the start of our journey, John and I have learned about trusting in that promise, listening – even when it’s hard, and following when we feel led.

All of that brings me to this. A few weeks ago, many of you know that we took a trip to Asheville, North Carolina. Some of you know the reason, some do not. I wanted to put it out there so you can all hear it from me as the message has started to spread!

The reason we traveled to ¬†Asheville was to take a serious look around. A few months back, John was offered a position with his company there. We are told it will be a 18 month – 2-year position, and that we will return at the end. A lot of you look at that and think it seems simple, at least we know we’ll be back! Yes. This is true, however, with children, a very close family in Pennsylvania and a very real desire to feel settled – without waiting for whatever is around the corner, it required more than we ever imagined.

After an initial, “no way, we’re staying.” John and I started to pray and to talk it out with those closest to us. For those who put hours into listening and providing input, we very much appreciate you and have carried your words with us through this process! Throughout the process we have not encountered a single “closed door.” Instead, it seems as though everything pointed straight ahead, into a new direction and a new journey. For me, this is terrifying and something that I’ve spent more time avoiding talking about than acknowledging. For John it is exciting!

Having said all of that, we have decided to accept the offer. Staying in Pennsylvania for the next few months, our family will be relocating to North Carolina in January.

Relocation means a lot. It means leaving those closest to us. It means stepping way out of our comfort zone. It means heartache and accepting that sometimes we will feel alone.

It also means excitement. It means starting all over and building new relationships. It means stepping out in faith to something that we cannot even imagine. It also means staying close to those here and waiting with excitement for when we get the opportunity to return and finding new ways to keep old friendships fresh!

Over the next few months, we will be preparing to sell our home and to find a new home in North Carolina. It’s a crazy process, but we are excited (and terrified) for what lies ahead. Thank you for your support…and thank you for following along on this crazy journey!

Water Bottles for Life On the Go

As a Mom of two busy little ones, a runner and the wife of a runner, I understand life on the go. I also understand that to fuel that life, the right products make all the difference. When it comes to water bottles and food storage systems, I had – until now – a hard time finding a solution that fit our lifestyle and our priorities as a family.

Introducing Nalgene.

Tagged with “A bottle for every adventure,” I was intrigued. I was also excited to give it a go and couldn’t wait to start testing the day this group of products arrived on my front steps!

It seemed as though there was something for the whole family; that early assessment was 100% correct.

I started out that night by bringing the fun blue On-the-Fly and Grip-n-Gulp bottles on our family walk. The boys were so excited to have a water bottle like Mommy…it’s hard to find that sort of thing!

The OTF was easy for my oldest to grip and to manage the opening and closing. He was so proud!

The grip-n-gulp was great for my little guy. It didn’t spill, crack or scratch, even after multiple “throws.” What can I say, he has an arm :). He could easily get a drink and I didn’t have to worry about the mess that generally follows toddler drinks on the go!

I have to say, my 24 ounce OTF – the same model as the 12 ounce but better for adults – was a great addition to my own lifestyle. I’ve kept it on my desk to keep hydrated during the day, have brought it to the gym and carry it around wherever I go!

The color is wonderful, but, my favorite feature is the opening. With a single click, I have access to a clean mouthpiece that’s easy to drink from and just as easy to close back up. No mess, no leaking, no fuss means perfect in my book.

Take a closer look at the opening here:

The prices are reasonable, but some of my favorite features are:

  • Easy cleaning – all of my samples have gone through the dishwasher without any cracking or discoloration and we run on high heat/sanitize every time.
  • Zero leaking. I can’t say that enough.
  • A lifetime guarantee. I don’t see any reason to use it, but all Nalgene products come with a guaranteed replacement if something goes wrong.
  • They’re made in the USA…this matters to me.
  • BPA and BPS free – no worries about chemicals.

All in all, these products were fantastic – I cannot think of a single complaint. I can say with confidence that Nalgene products are an excellent solution for families on the go and athletes looking for products to improve their training regimens.
