Superfood Crockpot Casserole


Last night I wanted to try something new. The result? Delicious!

Superfood Crockpot Casserole


  • 1lb cooked ground turkey
  • 1 minced onion
  • 1 chopped green pepper
  • 1 cup kidney beans
  • 1 cup black beans
  • 1 can diced tomatoes
  • 8 Oz tomato sauce
  • 1 cup frozen corn
  • 1 Tb seasoned salt
  • 1 Tb chili powder
  • 1 Tb cumin
  • 1 tsp paprika
  • 1 Tb fresh minced garlic
  • 4-6 servings cooked quinoa
  • 1 sliced avocado
  • Grated cheese (I used provolone)

It doesn’t get much easier than this:

Combine all ingredients except quinoa, avocado and cheese. Cook in Crockpot on low for 4-6 hours. Serve over quinoa, topping with avocado and corn. We also added some taco sauce for extra zest and served with Luke’s organic superfood chips on the side!

Square One

As promised. I’m back.

I’ve taken a lot of time to think about where to take this blog, what to share, what not to share…where to go from here.

And I decided it’s time to go back to square one.

When I began my fitness journey, as many of you know, I had a long road ahead of me. With 100 pounds to lose and no idea of how to do it, it was a learning experience. One that paid off BIG time!

Well, all of that took a back seat early last year when I found out we were not only expecting, but expecting twins!

I did some moderate running in the beginning of the process until I was told to stop. Since then, I’ve binge watched more television, spent more hours awake and eaten more frozen food than I’d care to admit :).

But, it was all necessary and with good reason. The babies are here, they’re healthy and our family is adjusting to being a family of 6! It’s been great fun!

Lately, I’ve started to think about my own fitness journey, and have wanted to do something for myself. In other words, it’s time to get back in shape. To go back to square one!

This weekend I hopped on the treadmill and decided to see what would happen. As you can see from this picture…it wasn’t fast. It wasn’t pretty. In fact, it would have been really easy to get down on myself. Not because of the time, but because I was comparing it to where I came from pre-twins.

I chose a different track. I chose to be proud.

See, I spent 8 months doing nothing. I had a rough delivery. Now I’m trying to find balance in life. So, the fact that I felt able to keep moving is a huge plus. I’m proud.

This is my square one. I’m excited to see what happens from here. I have a supportive family, especially my husband who has agreed to making our home gym happen! I’ve seen gains in the past and I know I can see them again.

This isn’t a New Year’s resolution. It isn’t a fleeting idea, it isn’t an impossible set of expectations. It’s a let’s commit and see what happens.
