Last night I wanted to try something new. The result? Delicious!
Superfood Crockpot Casserole
Ingredients:
- 1lb cooked ground turkey
- 1 minced onion
- 1 chopped green pepper
- 1 cup kidney beans
- 1 cup black beans
- 1 can diced tomatoes
- 8 Oz tomato sauce
- 1 cup frozen corn
- 1 Tb seasoned salt
- 1 Tb chili powder
- 1 Tb cumin
- 1 tsp paprika
- 1 Tb fresh minced garlic
- 4-6 servings cooked quinoa
- 1 sliced avocado
- Grated cheese (I used provolone)
It doesn’t get much easier than this:
Combine all ingredients except quinoa, avocado and cheese. Cook in Crockpot on low for 4-6 hours. Serve over quinoa, topping with avocado and corn. We also added some taco sauce for extra zest and served with Luke’s organic superfood chips on the side!
